Seminar - Shifting consumer demand towards sustainable diets

The seminar series 'Sustainable Food Systems: Connecting Expertise in Academia and Industry' is organized by the EFFoST Working Group on Sustainable Food Systems and Young EFFoST. It aims to provide detailed insights into various facets of sustainability in the food sector. All interested parties are kindly invited to participate in the second seminar on 25 June 2021.
The consumer plays a major role in the transition towards sustainable food systems. Consumers may act as drivers or barriers towards more sustainable production and consumption in the food sector. Shifting consumer demand for a more sustainable diet can be seen as one approach. Consumer's perception, information and purchase behavior related to sustainable foods may determine consumer's influence and power to change the present food system. In addition to the selection of sustainable foods, handling of food by the consumer and the generation or avoidance of food waste can also be seen as a major contribution to a sustainable diet and consumption. The second seminar will therefore address the following questions:
- What is the role of the consumer to influence and power change to the present food system?
- What is the consumers' perception and acceptance of sustainable food and a sustainable diet?
- What information is needed and how can it be communicated in order to facilitate the consumer's sustainable choice?
- What options for actions are available in order to change consumer's mindset, consciousness and habits? And which stakeholders should be involved?
