EFFoST2020 Pre-conference interview - Distinguished Prof. Julian D McClements

On Tuesday 10 November 2020, Distinguished Prof. Julian D McClements from the University of Massachusetts, USA will discuss the utility of the INFOGEST in vitro digestion method in the design and development of next-generation functional foods at EFFoST2020.

At the 34th EFFoST International Conference,  Distinguished Prof. Julian D McClements will be joined by Prof. Alejandro G. Marangoni and Dr Liz Specht to discuss food science that will improve food security during the plenary session ‘Feeding the world today and tomorrow’. 

Distinguished Professor Julian McClements is a prolific food scientist from the University of Massachusetts, Adjunct Professor at Zhejiang Gongshang University, and a visiting scientist in the School of Public Health at Harvard. He specializes in the areas of food biopolymers and colloids, and in particular on the development of food-based structured delivery systems for bioactive components. At EFFoST2020, he will share his vast knowledge on smart food design, digestion and foods of the future. In this interview, he shares his thoughts on the food challenges and how best to prepare the next generation of food scientists.

The 34th EFFoST International Conference will explore the theme 'Bridging high-tech, food-tech and health: Consumer-oriented innovations'. EFFoST2020 will be hosted by Technion, Israel Institute of Technology and held online from 10-12 November.
